Ellyngton’s in The Brown Palace Hotel and Spa, 321 17th St., Denver, has reopened after several months of renovations. The refresh of the space is elegant and inviting with a much brighter, larger-looking space. Along with the new look comes a new brunch menu carefully crafted by Kim Moyle, the first female executive chef in the iconic hotel since it opened in 1892.

On the menu you’ll find such standout dishes as signature crab cake Oscar or smoked salmon egg benedicts, caviar waffle bites, banana split parfait, breakfast nachos with shredded prime rib barbacoa, and waffle churros. We zeroed in on Breakfast Burger Sliders ($21) with sausage patty, fried egg, tomato and bacon aioli, American cheese, lettuce, tomato and fried potatoes. It was delicious and made for a hearty breakfast.

On Saturdays and Sundays there are bottomless mimosas and an interactive cart for diners to create their own signature bloody mary cocktails. Live music on Sundays. There’s reduced breakfast parking for $15 when validated at Ellyngton’s (excludes overnight parking). Hours are 6:30–10:30 a.m. Mondays through Thursdays, 6:30-11 a.m. Fridays and Saturdays, and 6:30 a.m.-2 p.m. Sundays. Reservations are recommended and can be made on OpenTable.

Turning 50

The Margarita at Pine Creek, 7350 Pine Creek Road, is celebrating its golden anniversary over the next several months. The award-winning restaurant, known for all-you-can-eat soup and salad lunches, has weathered all the ups and downs of the restaurant business under the watchful eye of Pati Burleson. After dabbling in running a small eatery in downtown Colorado Springs, Burleson, with her late husband, Ken Davidson, opened what is today’s Margarita at Pine Creek in March 1974.

Burleson, with head chefs Eric Viedt and Cathy Werle, will be recreating dishes and menus for the 1970s to celebrate the restaurant’s phenomenal history.

Coming up is the Spring Inspired Tea at the Margarita, with reservations taken 11 a.m.-1:30 p.m. Saturday . For $37 plus tax and tip, you sample an array of teas, savory bites and homemade pastries.
